Garlic and Herb Baked Sweet Potato

This baked sweet potato makes a great accompaniment to a dish, or the perfect lunch time snack on its own. They’re easy to make, delicious and versatile. I’ve kept the recipe pretty basic, but once baked, you could top with vegan cheese! The possibilities are relatively endless. Let me know what you come up with!

Total Time: 1 hour

Yield: Allow 1 potato per person

 

Ingredients:

Large sweet potatoes

Fresh or dried garlic

Fresh or dried mixed herbs

1.) Thoroughly wash your sweet potatoes and pat dry. On a chopping board, cut sections out the top of the potatoes (as in the photo above). Using a pastry brush, brush the ridges with sunflower oil, ensuring you get into all the gaps!

2.) Crush the garlic, and distribute evenly between the potatoes in the ridges, then sprinkle with herbs, salt and pepper.

3.) Bake in the oven at 180c for 30-45 minutes, depending on the size of the potatoes. To test, insert a fork into the middle of the largest potato, it should be nice and soft when cooked. Serve with your favourite Vegan salsa or dip!
