Lemon and Vegetable Pasta

When it comes to quick, easy and versatile meals, pasta is the first thing that comes to mind. There’s a reason that pasta is such a big part of cuisine in many countries, and that is because you can do just about anything with it! The is a nice quick one-pot recipe, which means you can spend less time in the kitchen cooking and washing up and more time enjoying the important things in life (like eating!). The lemon in this recipe gives a nice subtle taste when paired with the vegetable broth and the garlic. If youre not sure how to make a vegetable broth, a veg stock cube mixed with the given amount of boiling water will do the same job!

  • 8oz / 225g Spaghetti Pasta
  • 3 cups / 700ml Vegetable Broth
  • 1/2 red onion, diced
  • 4 pieces of Asparagus, chopped
  • 1 Clove Garlic, crushed
  • 1/2 cup frozen peas
  • Juice of 1 lemon
  • Step 1 Add all your ingredients to a large pan, aside from your peas. I use a pan with a large surface so i dont have to break the pasta.
  • Step 2 Bring to the boil and leave to simmer until your pasta is cooked, stirring occasionally.
  • Step 3 Add your peas and leave to cook for a further 2 minutes,
  • Step 4 Serve in bowls with a sprig of basil.
