Quick and Easy Vegan Chocolate Cupcakes Topped With Chocolate Fudge Ganach (The Cheats Way!)

If you’re looking for a cupcake recipe to test your skills, this is not for you! This recipe is the almost ‘too good to be true’ cheats way to get perfect vegan cupcakes every time. They’re lovely and moist, and are perfect for parties. It’s worth mentioning that if you’d prefer one big cake, the method is just the same.
Ingredients For The Cupcakes:
1 box Betty Crocker devils food cake mix (Available in most supermarkets)
1 330ml can of Coke (I used Diet Coke, but either work.)
Ingredients For The Ganach:
180g Vegan dark chocolate
60ml almond milk (any milk substitute will do)
55g dairy-free margarine
1tsp vanilla extract
50g icing sugar
1.) Preheat oven to 180c. Empty the contents of the cake mix into a large mixing bowl and add the can of coke, mix gently with a spoon until combined.
2.) Spoon your mix into your prepared cupcake cases, you want each one just over half full.
3.) Bake for around 15 minutes, or until a rounded knife inserted fully into the centre of a cupcake comes out clean, and then cook on a wire cooling rack. Be careful not to over bake, or you might lose some of the moistness!
1.) Break up your chocolate into small pieces, then melt on a low heat with the milk, margarine and vanilla extract. Stir until completely melted and combined, then add the icing sugar.
2.) let the pan cool for about 10 minutes (moving the mix into a bowl will help speed this up!) and then place in the fridge for about 20 minutes. Keep checking back and stirring occasionally, you want your mix to be thick enough to spread without running but not too thick you can’t spread it. Sometimes the mix needs longer, and sometimes it may only need 10 minutes.
3.) using around 1tbsp of mix per cupcake, spread or pipe evenly on top. I then used Oreos to decorate my cupcakes for a party, but you can use any vegan decorations or alternatively leave them as they are! Store in an airtight container for up to 3 days.
